I'm quite certain that me and my husband, J, are the only ones reading this blog but that's okay with me. The idea was for me to have an audience (real or imagined) to write for which means I have to cook too.
Tonight was a perfect example of a night that I didn't want to cook at all. My feet were so achy and on top of that dinner didn't get started until close to 8 pm. Not really an issue but we go to bed normally around 9 or 10. The later it got the grouchier I was getting and thinking, "what can we order in?" It is now 9:15 and I have just finished eating my dinner. I'm happy with that!
So this, Garlic Roast Chicken with Rosemary and Lemon, was another one of Rachel Ray's 30 minute meals. This truly did take 30 minutes. I think I might have to start using more of her recipes.
The changes I made were few. Since it was just the two of us I used only 2 chicken breasts which was just over 1 lb of meat. I kept the rest of the amounts the same except a little less oil and 1/2 the lemons juice. The rest I used for my water. I served the chicken witha side of rice pilaf that I made from a box. This was J's least favourite part of dinner but I liked it. He just likes everything made from scratch. I don't know how to make rice pilaf with out a box and a seasoning packet. Maybe I should look into that... The vegetable was corn and limas I grabbed from the freezer.
I felt the chicken was a bit dry but J disagreed. Oh also I omited the last part with the broth or wine because we had no wine and the broth is for tomorrow's dinner. I didn't miss the juices poured on top at all though. It had such a nice fresh lemony flavour! This will definitely be one recipe I'll keep to use again and again.
Oh, one more cool thing about dinner tonight... I got to use rosemary from our garden. This plant has been growing just out our front door for over a year now. Very easy to take care of too.
